I was up early looking for that enevitable school delay on the news, after the announcement my thoughts turned to breakfast for the sleeping kiddies. You ever get stuck in a rut trying to think of something new and different and nothing seems to come to mind. I hate when that happens...So where do I begin?.... as I stare at my bountiful stack cookbooks on the shelf...
Realizing I had a can of "Comstock" cherries in the refrigerator left over from a cake I made the other day and right next to that happened to be a container of left over almonds hhhmmm.
I made some Almond Cherry Bars.
In a food processor I pulsed up the almonds, added flour, sugar and a pinch of salt to make a "cookie" like crust. Pulsed up the cherries to make a puree- spread out onto the crust added a little more of the crumbled cookie dough to the top and there ya go. Simple and quick.
My oldest loves anything cherry so here are a few cherry theme goodies I've made in the past.
