Cream Filled Cupcakes



I love the little surprise of biting into a filled cupcake. Let me just say these did not last long in my house.
I chose a simple devils food cake recipe as my base.

For the filling-well the possibilities are endless.

Peanut Butter
Strawberry
Raspberry
Cream cheese
Whipped Cream....

I went with a Raspberry Whipped Cream for my filling which I think goes great with chocolate cake and  Ganache topping.




Ganache is a simple recipe of  chopped  chocolate with heavy cream.
  • 9 ounces bittersweet chocolate, chopped
  • 1 cup heavy cream
  • 1 teaspoon of vanilla or vanilla
Heat heavy cream just till boiling. Add chocolate and let sit for 3-4 minutes then stir until all chocolate is melted. Add your flavoring. You can  either dip the cakes in or spoon over top. Delish!

Buttercream Flowers

Really- what smells better than Daffodils in the spring?

  I was inspired to make these tasty little treats from a video tutorial on "www.mycakeschool.com".  If you should ever get the chance check out her web site. Melissa has a ton of wonderful ideas and instructions on decorating cakes and cookies.

My version of a Daffodil. Next time I'll use a bit stiffer icing, this was a little too soft but it did the trick.


These cakes are going to my daughters homeroom tomorrow  in honor of  Earth Day (4/15)


I know I'll be incorporating these designs on other treats. Roses are really beautiful on cake but I think I've fallen in love with doing the Carnations. I like the fact that they are easy to make and they add they have a bit of elegance to them. 

I was given these cute silicone baking cups at Christmas. These are great for kids parties or themed adult parties. These came from the Christmas Tree shop but you can find them almost anywhere.

My version of the "spring Oreo cookie"

So today I searched the internet hi and low for a recipe that would resemble the Oreo. I have to say there are so many to choose from but my concern of course is how good do they taste.
I used a basic chocolate wafer recipe which I got from "Martha Stewart" .com and for the filling I used a basic butter cream recipe. 

 Of course these don't have that hard crunch you find with the original because they are "homemade". None the less they are quite good with a cold glass of milk.
