Pastry Dough

So this week I've been trying out different pastry dough. I've been craving Entenmann's Raspberry Danish. It was a special treat when my mother would bring it home. So I thought I'd give it a try.

Cinnamon Rolls

My Godmother got me hooked on these sweet rolls.  Although she baked them in muffin tins I decided to do them in a 13 x 9 pan. This is a simple recipe just takes a little time.

Preheat your oven to 375.

DOUGH

4 Cups Flour                                                          
3/4 Cup Sugar
1 package dry yeast
1 teaspoon salt
1 Tablespoon cinnamon
1 Cup Milk
1/4 Cup warm water
2 Eggs 
2 Tablespoons melted butter

Place warm water and yeast in a bowl. Mix to combine then allow to sit
for 5-10 minutes. 

Add 3 Cups of Flour and the 1 cup Milk to the yeast mixture. Mix until just blended. Try not to over mix.
Cover with a cloth and let sit until it doubles in size. Usually 1 1/2 to 2 hours.
Once it has risen punch down.
At this point I use a dough hook on my mixer but you can do this by hand.
Add the sugar, salt, melted butter, cinnamon then the 2 eggs. The dough will be slightly wet and sticky. Add the last 1 Cup of Flour. This will make the dough a bit more manageable.

Remove from bowl and place on a lightly floured surface,  roll out your dough in the shape of a rectangle about 12 in x 8 in. or 1/4 inch.

 Filling

1/4  brown sugar-light or dark, whatever you prefer.
1 Tablespoon Cinnamon
2 Tablespoons melted butter 
Brush Melted butter over dough
Sprinkle sugar and Cinnamon Starting in the middle begin to roll.

 Once rolled cut into 1 inch to 1 1/2 inch slices.



 As you can see I use dental floss-I know crazy but it is easier to cut the dough. But you use whatever you are comfortable with. Take your slices and place in a butter dish and let rise 1-2 hours. You want them to be almost double in size.



After they've  risen brush with melted butter-I know CALORIES but it does make them taste soooo good. Actually it make the tops a nice golden color.

Bake at 375 for 20 or until they turn golden brown.
Remove and allow to cool for few minutes then add a glaze or dust with powdered sugar. 
I personally like the glaze.. :)

1 Cup Powdered Sugar
1 Tablespoon Milk
2 Teaspoon Honey.

Serve warm..Yummy!

Chocolate Chip Muffins


So this morning I decided to mix up my chocolate chip muffin mix.. My kids being very picky about everything they put in there mouths. I decided to try the recipe with substituting a little whole wheat flour and adding wheat germ (honey). Not one kid mentioned they tasted different or funny. And to boot they each had a second. So sometimes experimenting a little can have great results. :)
Recipe
1 1/2 Cups Flour- 1/2 cup wheat flour  or use all Flour
1/4 Cup Wheat Germ or omit if you don't like it
1/4 Cup Sugar
1 Tablespoon Baking Powder
1 egg
1 1/4Cup Milk
1/4 Vegetable oil/Canola oil
Mix all dry ingredients in a large bowl
Mix all wet ingredients in a small bowl
Pour wet into the dry and mix until all incorporate well.
I use my 1/4 measuring cup to scoop out batter into muffin tins but use
whatever you are comfortable with and keep batter at least 1/2 in to 1/4 from top of tin.


Bake muffins at 350 for 18-20 min depending on your oven.
