I love love Bananas but by the end of a week I just can seem to get rid of the last few in a bunch. Instead of chucking them into a composed pile I try to use them up in muffins and bread.
This recipe is really simple. You can use it to make both muffins and bread. I sometimes will add mini chocolate chips or walnuts to the batch but this time I kept it simple.
Pre heat oven 375
1 Cup Sugar
1/2 Cup Butter or Shortening
1/2 Cup Sour Cream or Butter Milk
1 teaspoon Vanilla
2 1/2 Cups All Purpose Flour
1 Tablespoon Baking Powder
2-3 Ripe Bannans
Optional Walnuts or Chocolate Chips
Cream together butter and sugar
Cut Banana into chucks and add to sugar mixture. I like mine a little chunky so I just mix slightly.
Add Eggs and blend well
Alternate flour and sour cream
1 Cup flour -blend slightly then add 1/4 sour cream
Repeat flour and sour cream
Mix just till combine. Should almost resemble a cake batter.
Try not to over mix or the muffins and bread will not rise properly.
Place in muffin tins - fill about 3/4 full and bake for 10-12 minute depending on your oven-always double check the center.
In a bread pan bake for 20-30 minutes. Double check the center to make sure it isn't gooey. Ovens do vary in temperature.
